Here’s a quick and easy recipe for a veggie omelette! – A perfect way to get your proteins and veggies in during the first meal of the day plus, it will keep your blood sugars on an even keel and you won’t need a mid morning snack! Happy days!

Veggie Omelette

Serves 1

1 teaspoon coconut oil

1 or 2 eggs depending on how hungry you are.

ΒΌ cup veggies (grated courgette, sliced mushrooms and diced peppers)

dash salt, pepper and/or turmeric

Add coconut oil to a frying pan and melt on low-medium heat.

Grab a bowl and beat the eggs with the veggies of your choice along with the spices.

Pour the egg mixture into pan and lightly fry the eggs.

When the bottom is lightly done flip over in one side and cook until white is no longer runny.

Ta – da!!

Why not try substituting grated, sliced, or diced portion of your favourite vegetable. Try grated carrots, chopped broccoli or diced tomato!!
